Cold sauce with green cardamom
· 1000 g water
· 50 g glucose
· 12 capsules of cardamom
· 3-4 cm fresh ginger, peeled and minced
· zest of 1 lime
For thickening use one of the following
· 4 g agar (0.38%)
· 20 g pectin (1.9%)
· 10 g gelatin (1.0%)
Bring water and glucose to boil and infuse cardamom, ginger for 20 min. Add desired
thickening agent and stir until dissolved (if using agar or pectin, mix with 10 g sugar to aid
dispersion). Strain and serve.
