CINOGEL Gellan Gum Applications/Usages: Pomegranate and vodka fluid gel


Pomegranate and vodka fluid gel

· 1 g low acyl gellan (0.5%)
· 100 g pomegranate juice
· 100 g vodka

Heat pomegranate juice to 65 °C. Add gellan,blitz with immersion blender. Continue mixing
by hand until cool and partially set. Add vodka and blitz with immersion blender.
