Bourbon whiskey gel
· 600 g bourbon whiskey
Note: gellan gum is a blend of low acyl andhigh acyl gellan
In a saucepan, disperse gellan into whiskey with immersion blender. Bring to simmer and
remove from heat. Pour into shallow pan and leave to set at room temperature. Cut into
desired shape for serving.
